Soba Salad

This salad tossed is exactly what you need for a quick, light meal

Ingredients (serves 2)

1/4 red onion, sliced
1/4 red pepper, sliced
1/4 yellow pepper, sliced
50g broccoli florets
140g soba noodles
4 tbsp Sempio Oil-free Vinaigrette
Sesame seeds (optional)

How to make it

  1. Bring a pan of water to the boil over a high heat. Place a steamer-insert or metal colander over the pot.

  2. Cook noodles according to package directions.

  3. Place the broccoli in the steamer and cover with a lid.

  4. When the noodles are cooked, drain and leave to cool.

  5. In a bowl, combine noodles, broccoli, sliced vegetables and Sempio Oil-free Vinaigrette. Toss well and serve topped with sesame seeds.
