Kale & Fennel kimchi
A virtuous combo of nutrients you can’t stop picking
Ingredients (serves 2)
4 fennel bulbs, sliced
1 bunch curly kale (200g/7Oz), cut into bite size pieces
2 lemons, juiced
1 Kimchi @Home base
Extra virgin olive oil (optional)
How to make it
In a large bowl combine fennel, kale, lemon juice and kimchi base and thoroughly mix and massage for 2 minutes until kale slightly wilt
Serve right away or keep in the fridge for up to 2 weeks. Add a drizzle of olive oil to take the aroma to the next level.
This is a great kimchi to serve with starchy dishes like pasta or rice because it is refreshing and palate cleansing.
