Turmeric and coconut kimchi
An delicious indian-inspired kimchi packed with health benefits
Ingredients (serves 2)
1 Napa cabbage, 1 inch pieces (1Kg/2.2lb.)
2 carrots, grated
1 Kimchi @Home base
2 tsp turmeric
4 Tbsp. shredded coconut
3 Tbsp. raisins or dried cranberries
How to make it
In a large bowl, combine cabbage, carrot, turmeric, coconut and raisins. Add Kimchi @Home base and thoroughly mix (and massage) for 2 minutes until cabbage is stained yellow.
Serve right away or store in the refrigerator for up to 3 weeks.
For a simpler version you can skip the coconut and raisins and do simply a plain turmeric kimchi.
